Lately, all the recipes I’ve tried have been coming out really well.
Got to love good luck, right? Well, this week isn’t any different.
We joined Meatless Monday again this week with this Easy Lo Mein from Damn Delicious. Mushrooms, red pepper, carrots, snow peas(I subbed sugar snap peas because my grocery store was out of snow peas), spinach, and garlic are stir fried, then combined with lo mein noodles(I used whole wheat linguine, because, again, my grocery store falls a bit short) and a simple sauce (soy sauce, sugar, sesame oil, ground ginger, and Sriracha).
Next up, this Creamy Chicken and Corn Chowder from Cooking Classy. It has chicken, corn, jalapeno, red pepper, onion, potato, garlic, bacon, and green onion in a flavorful broth made creamy with half-and-half.
This had some of the same ingredients as the Creamy Chicken Tortilla Soup, but is a delicious soup all its own. The broth is simply flavored with bay leaves, black pepper, and salt. It creates a perfect background for all of this soup without overpowering the ingredients.
Next, we have simple Cheesy Chicken Bagel Pizzas from Cooking Light. Very short ingredient list here: bagels, marinara sauce, chicken, and cheese.
These taste just like bagel bites. Very tasty and take less than five minutes to make.
Last, I made Slimmed Down Loaded Potato and Buffalo Chicken Casserole from Cook Lisa Cook. Potatoes and chicken are given a pumped up buffalo sauce to cook in, and topped with cheese, green onion, and bacon. I served mine with Parmesan green beans.
I will warn you: This recipe takes a while! I did not bother to read the directions beforehand so I thought I would go into the kitchen at 5 and be eating no later than 6. Not quite so, but this dish is worth every moment of effort. It is so spicy and flavorful, I wanted to eat the whole thing! Thankfully, it is also very filling, so I wasn’t able to.
