This week’s post is a bit chicken-centric.
First up, do you remember the shrimp stir-fry from the other week? I mentioned that the recipe itself is just for the stir fry sauce, so you could use any protein in theory. Well, this week I used chicken with the delicious Spicy Chili Garlic Stir Fry Sauce from Or Whatever You Do.
I’m happy to report that this time around was just a delicious as the first. The sauce is wonderful on the chicken. I kept my veggies the same this time, just snow peas, red bell pepper, and onion.
Next up, Southern Bird Dogs from She Wears Many Hats. If you don’t know what Southern Bird Dogs are, don’t feel bad, I didn’t either. I stumbled on this last week while perusing Pinterest.
Now, a Southern Bird Dog is chicken tenders, bacon, cheese, and honey mustard in a hot dog bun. Why have I only heard about this now? They are so good! I used store-bought buns and frozen chicken tenders for ours because I was feeling lazy that day. Considering how good they were, I can only imagine how good if you made your own chicken tenders.
Following that easy creation I made Hasselback chicken – Cajun with Pepper Jack and Spinach from Cooking Creation. I served this with Bacon and Pea Macaroni and Cheese from Damn Delicious.
Basically you’ll make horizontal cuts into a chicken breast (without going all the way through) and stuff them with pepper jack cheese and spinach. It’s not as time-consuming as it sounds, and it is really tasty. Big learn-from-my-mistakes warning though: be very careful of the salt content in your Cajun seasoning! I wasn’t careful, and mine was really salty.
The Bacon and Pea Macaroni and Cheese was wonderful. It has almond milk and Greek yogurt to make it lighter, and it tasted great. It was nicely cheesy without being heavy.
Last up this week, Spanish Style Chicken and Dumplings by Rachael Ray on Food Network.
This was a fun twist on chicken and dumplings. The broth was rich and flavorful, and the chorizo was a nice addition. It a really good winter dish, warm and comforting. The hubs even said he would be happy to eat this for the rest of his life.
