Well, this week I have another cookbook post. Since the weather is getting warmer, I picked up Sam the Cooking Guy: Just Grill This!
My favorite thing about this cookbook is the down-to-earth perspective of it. The tone is honest and straightforward, and sounds like he is just speaking to friends. The recipes are wonderfully uncomplicated and the photos are mouth-watering.
The first recipe I made was a Chicken Parmesan Sub.
This was amazing! The chicken is really simply seasoning and remains incredibly juicy, and grilling the tomatoes softens and sweetens them so they become almost like a spread on the sub. The ciabatta roll is perfect for this sub because it holds up perfectly against the juiciness of the filling. The sandwich is bursting with fresh, bright flavor and is a perfect spring/summer recipe.
Next, I made the Herbed Honey Dijon Burger.
Another perfectly simple recipe, you make a honey dijon spread to mix with the meat, herbs, and salt and pepper. It took me less than ten minutes to get the burgers to the grill from start, and they were delicious. The honey dijon wasn’t too sweet or overpowering.
Last up, I made Crispy Polenta and Jerk Pork(adapted from the recipe for Pork “Jerked” Tacos).
The polenta is foolproof since you buy a pre-made tube of it and just slice and grill, but that doesn’t mean it wasn’t good. It got a great crust on it from the grill, while the middle remained soft and creamy.
The pork was not what I expected. I’ve never had jerk anything, so I had this assumption that it was just burn-your-mouth spicy, but I was completely wrong. The pork turned out spicy but packed with flavor.
I’m looking forward to trying more recipes from this cookbook, since everything I’ve tried has been fantastic. And if you love to grill, definitely pick this up. It would be a great addition to anyone’s collection.
