Caesar Dressing

Hello again!

Caesar dressing is one of our absolute favorite dressings. The hubs likes to get Caesar salads when we go out, and I’m always stealing a bit out of his bowl.  Not to mention, our favorite Mexican restaurant (yes, Mexican) has a fantastic Caesar side salad. I order it every time (along with BBQ Chimichangas, which I’m addicted to).

Unfortunately, I don’t love the bottled dressing at the grocery store. I’ve tried every brand they have and something is always just a bit off.

Caesar Dressing

So naturally, I decided to make my own. And it’s completely worth it! Fresh Caesar dressing is so much more flavorful than bottled. It has a brighter, less muddled flavor that stands out better than the bottled versions.

I hope you’ll try this dressing out. If you do, snap a pic of whatever you put it on and hashtag it #messycountersfp. I’d love to see your creations!

Keep an eye out next week for a recipe utilizing this dressing!

Caesar on Salad

Caesar Dressing

1/3 cup Greek Yogurt

1 ½ tsp anchovy paste, or miso

1 garlic clove, minced or grated

1 tbsp fresh lemon juice

2 tbsp Extra Virgin Olive Oil

2 tbsp  grated Parmesan Cheese

½ tsp Dijon Mustard

1 tsp Worcestershire sauce

Salt and Pepper, to taste

1-2 tbsp Milk (to get the consistency desired)

Combine all ingredients up to Worcestershire sauce in a small food processor or blender. Pulse until fully incorporated. Taste and add salt and pepper as needed. If the mixture is too thick, add the milk until it reaches the desired consistency.

What’s your favorite dressing?
