Welcome to Messy Counters

Hi all!

For all of you that have been here a while this post won’t be news to you, but I’d like to take a minute today to discuss Messy Counters and Floured Paperbacks, why I’m here, and what I’m about.

Lets start with part one: Messy Counters. I love to cook. I love trying new recipes, but it’s more about the feeling of eating a meal I took time to make, and seeing the happiness it brings to those sharing it with me. Food really does bring people together, and I’m not sure I’ve enjoyed anything as much as someone telling me they loved my food.

I started this blog with the intention of sharing recipes I’ve tried from around the web, and have since started posting my own recipes. Working on my own recipes is a completely different experience. It’s so fun thinking up recipes, and then having to figure out how to make them the way I imagine, to balance the flavors and make it delicious in reality, not just concept. Sometimes the recipes just don’t work out the way I want them to, and I have to go back to the drawing board. This process makes me think both more critically and more creatively about my cooking, and I believe it is expanding my skill set more than simply making other recipes ever could.

So, let’s move onto the second part: Floured Paperbacks. I’ve loved reading as long as I can remember. Because of this I added in Novel Mondays, where I post reviews on the book I read that week. I wanted to talk about the books I’m reading, to help myself think about them in terms of my own enjoyment, and to be mindful of the efforts these authors took to get that book into my hands. Reading is a wonderful experience, and I hope my review will interest a few more people to pick up a book, or introduce people to new books.

Wow, this was amazing. Am I the only one who sometimes picks a recipe thinking maybe they won’t like it? No? Okay. Well, I chose this to try  something that is still very new to me (the butternut squash), and I could not be happier! This is packed with flavor! I wish I could pipe the smell of everything roasting through your computers, because it was drool-inducing. The bacon adds a wonderful smokey flavor, and the goat cheese adds a fantastic tang.

Chicken Pot Pie

This a comfort food favorite, and this is by far the best chicken pot pie I’ve had. I love how simple but delicious it is, and it’s adaptable. The first time I made it, I followed the recipe exactly, and loved it. This time I used leftover turkey I had, and crescent roll dough for the top instead of pie dough. Still just as delicious. I also added a sprinkle of Everything Bagel Seasoning to the crust (so yummy!).

These were gooey, melty, cheesy goodness, and they taste just like a white pizza. A word of advice: the longer you let the cheese mixture sit before making these, the more garlicky they get. I mixed mine up and then didn’t make the sandwiches for two days, and there was a distinct garlic punch in every bite. I loved it, but if you don’t love garlic as much as I do, don’t let it sit that long.

Crockpot Pierogi Casserole with Kielbasa from Daily DIY Life.


I made my own pierogies for this (using this recipe from Innocent Delight), and I am never going back! They are a little time consuming, but they aren’t hard to make, and it was a fun project for the hubs and I. He rolled and cut the dough, and I filled and closed. I think once we got started, dinner was ready in an hour and it was worth it! Homemade pierogies are amazing, and this sauce is absolutely delicious. I didn’t end up making this in the crock pot though. I just make the sauce in a pan and poured it over the top of the cooked pierogies and kielbasa.

Season with Spice Giveaway!

I am so excited today to talk to you about Season With Spice.

Almost a year ago, I stumbled on a post for these Ramen Noodles with Korean Spicy Chili Dressing. They looked delicious, but they used a spice blend that I didn’t have, and for some reason, I just forgot about it.

Then last month I stumbled on the recipe again, and I knew I needed to try it. I ordered the Spicy Korean Chili Seasoning along with a few others that looked interesting to me.


To my surprise, my spices arrived only three days after I ordered them, and with a lovely handwritten note thanking me for my order. I love the glass jars, and the labels (I’m a sucker for good packaging). You can see the quality of the spices immediately, and they did not disappoint.

The Ramen Noodles with Korean Spicy Chili Dressing were phenomenal. I’m not a big recipe repeater, but I’ve made this every single week since.  In just a few weeks, I’ve used up almost the entire jar! Time to reorder, huh?

Maybe my favorite thing about Season With Spice is their blog, where they post recipes using their spice blends, and even link to these pages from their products in the online shop, so you can have an idea what to cook with them before they get to your door.

Salmon Bibimbap

The hubs loves Salmon, and I rarely cook it since I am not a big fan. So, I made this Salmon Brown Rice Bibimbap mostly for him, thinking I would just eat what I could of it. But that is not what happened. I ate my entire bowl! I’m still not a fan of the aftertaste of fish, but the meal was delicious, and I can always brush my teeth when I’m done eating.

Korean Chicken StirFry

This Spicy Korean Chicken Stir-Fry with Asparagus, which uses the Korean BBQ Blend I bought, looked too good to pass up. The asparagus at my grocery store looks pretty sad, so I picked up a stir-fry pack instead. The sauce is amazing, spicy but sweet, and would go well with almost any protein/veggie combo. I served mine with quinoa since I was out of rice that night.

All three recipes featured today came from the Season With Spice blog, and all three were hits in my house, recipes which I would make again.
