Food Friday – 04/03/2015 Desserts and Snacks

This week I’ve got some desserts and snacks to share.

The hubs had a birthday last month(it felt like EVERYONE had a birthday last month!) and he wanted an Orange Dreamsicle cake. What I made wasn’t exactly that, since I couldn’t find a recipe I wanted, but he loved it anyway. It was moist and had a great orange flavor with just a hint of smooth vanilla. I present Orange Cream Bundt Cake!

I combined this tutorial on How To Doctor a Boxed Cake Mix from The Not-so-Modern Housewife with this Dreamsicle Cake recipe from GOODness Gracious. I had a box of Orange Supreme cake mix, and doctored it with a French Vanilla pudding mix, and then I used orange jello like the Dreamsicle cake recipe directed. I did end up forgoing the cream cheese frosting.

Next up, another treat from the hubs birthday, Chocolate Dipped Fruit.

I didn’t follow a specific recipe for this one. Here’s what to do:

  • Make apple wedges and soak in a deep Tupperware container with the juice of half a lemon and filled 2/3 with cold water just to keep their color(just until you’re ready to begin dipping)
  • Melt 12 oz chocolate (I used semi-.sweet morsels) with about 1 tbsp oil until smooth and glossy.(I used a glass measuring cup and did 30 second increments in the microwave) You might add a tiny bit more oil if it doesn’t seem thin enough.
  • Dip fruit (I dried the apples as I went with a paper towel before dipping) in melted chocolate, gently shake off excess, and set on a Silpat or wax paper.
  • Once all the fruit was dipped I used a whisk, (I hear a cheap plastic squeeze bottle is easier. I used what I had) and flung chocolate over the tops to make the stripes. With the whisk, you dip it in chocolate, shake a little off, and use a flicking motion over the fruits. It worked really well, but can be messy!!

These were great, and really quick and easy. Sorry Edible Arrangements, I don’t need you anymore!

Okay, on to snacks!

I love the pretzel pieces from Snyder’s and when I found this recipe for Honey Mustard and Onion Pretzels from Table for Two, I had to try them!

These are quick and easy. Less than an hour and you have a large batch of these addictive wonders. They taste just like the commercial ones, but not quite as in your face flavor-wise, which I loved. Sometimes the ones from the store can be harsh.

My last recipe of the week is a twist on the Honey Mustard and Onion Pretzels. When I went to the grocery store, I bought two pounder bags of sourdough nibblers pretzels (they were on sale!), so I had an extra bag. And eating them as is just wasn’t good enough anymore, so I made my own recipe! Here’s my recipe, Buffalo Ranch Pretzels!

Here’s how I made these:

  • One “The Pounder” bag of sourdough nibblers (16 oz.)
  • 2/3 cup vegetable oil
  • 2-3 tbsp buffalo sauce (I used 1.5 each of Frank’s Red Hot Buffalo and Buffalo Wild Wings Spicy Garlic)
  • 1 packet Ranch Dressing/Dip Mix(just the powder)

First, mix the oil, buffalo sauce, and ranch mix in a large bowl. Then smash the pretzels to pieces, however big or small you like. mix in with the sauce ingredients to coat and spread out on a baking sheet. Bake at 275 for 30 minutes. Cool on paper towels(to absorb any excess oil), and store in an airtight container.

I LOVED these! They were exactly what I wanted. Wonderful ranch flavor with just a bit of heat.
