Sorry I’m a day late everyone! NaNo, and the hubs being off for two days completely threw me off. But I’m back! And I’ve got another Fat Kid Chicken Sandwich recipe for you guys!
Thanks to a poll from a recent post, I decided to try my hand at a Monterey Chicken Fat Kid.
The original Monterey Chicken recipe(I make this one from Life in the Lofthouse) is a chicken breast topped with BBQ sauce, Ro-Tel, cheese, and bacon. It is amazing!
I used tomato slices on my sandwich, and I missed the slight heat from the green chilies in the Ro-Tel. So when I made this again, I added a bit of crushed red pepper on top of the bbq sauce, and it was perfect. Feel free to omit this, or use a squirt of sriracha or your favorite hot sauce for that heat. Whatever you like best.
Any way you make, this sandwich was really good. The hubs loved it, and said he can’t wait for the next installment of the Fat Kid Chicken Sandwich.

4 frozen chicken patties
4 onion buns
8 slices bacon, cooked to desired doneness
4 tbsp bbq sauce
Crushed red pepper, to taste
4 green onions, chopped
4 ounces shredded cheddar cheese
Cook chicken patties according to package directions. Or don’t. My package says 17-20 minutes at 400°, but mine came out better at 425° for the same amount of time. The breading got crisper.
Using your broiler, toast bun tops. Set top buns aside, and flip bottom bus right side up. Smear bottom buns with bbq sauce, crushed red pepper, chopped green onion, sliced tomatoes, and cheese. Broil until cheese is melted. Top with chicken patties, bacon, and top buns. Enjoy!
